It’s uncharacteristically warm for TN today, so I jumped at the opportunity to get outside and use the grill. I decided to make some delicious Basil Grilled Chicken with a Basil Butter to go on top. Yum. I love chicken that’s been charred on the grill–that char is one of my favorite flavors you can make. And then to go topping it with decadent basil butter? The butter melts all over the chicken, covering it with herby goodness. And it’s easy.
- 3/4 teaspoon coarsely ground pepper
- 4 chicken breast halves, skinned
- 1/3 cup butter melted
- 1/4 cup chopped fresh basil
- 1/2 cup butter, softened
- 2 tablespoons minced fresh basil
- 2 tablespoon grated fresh Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon fresh crushed black pepper
- 1/8 teaspoon white pepper
Press ¾ teaspoon pepper into meaty sides of chicken breast halves. Combine 1/3 cup melted butter and ¼ cup chopped basil; stir well. Brush chicken lightly with melted butter mixture.
Combine ½ cup softened butter, 2 tablespoons basil, Parmesan cheese, garlic powder, salt and pepper in a small bowl. Beat at a low speed with an electric mixer until smooth. Transfer to a small serving bowl; set aside.
Grill chicken over medium coals 8 to 10 minutes on each side, basting frequently with remaining melted butter mixture.
Serve grilled chicken with basil-butter mixture. Garnish with fresh basil sprigs if desired.
